Bacon Avocado Chicken Salad with Lemon Vinaigrette – Everyone Enjoys this Bacon Avocado Chicken Salad with Lemon Vinaigrette! Loads of vegetables, crispy bacon, and creamy avocado produce the ideal foundation for the healthy salad dressing. Salads are an easy way to eat healthy for lunch or dinner.
However they can quickly get out of control when you start adding a lot of unhealthy sweet and creamy salad dressings. Restaurant meal salads could quickly top out at around 1200 calories. That is no Bueno.
This Bacon Avocado Chicken Chopped Salad recipe makes a lot, and it is excellent for meal planning and lunching on all week (be sure not to dress the whole salad if you are not using it all at once). You are going to receive approximately 4-6 servings (lunch parts are generally smaller), which will equal 300-470 calories per serving, including the dressing. Not bad for a complete meal!
Chopped salads are fast and straightforward, based on the number of ingredients you’re using. This Bacon Avocado Chicken Salad also has:
- Chicken breasts — nourish your own using one of the three secure methods: Stove Top Chicken, Baked Chicken, Slow Cooker Shredded Chicken.
- Fresh herbs (chives and parsley)
- Romaine lettuce
- Roma tomatoes
All of these ingredients are chopped into bite-sized bits and tossed together with my irresistible lemon vinaigrette. You could go mad and add much more veggies if you like; things like shredded cabbage, carrots, bell peppers, and sunflower seeds are great additions.
Every salad needs a good grooming , also this Bacon Avocado Chicken Salad is not any different. It deserves better than a mayo-based dressing that’s going to overpower the flavors of bacon, corn, avocado, and herbs. Enter my tangy, refreshing, and slightly sweet Lemon Vinaigrette. Here Is What you will need for this healthy salad dressing:
- One lemon
- One lime
- Olive oil
- Two cloves garlic
- Salt & pepper
If you are staying away from sugar, you could omit the honey it simply adds a balance into the acidic citrus. You can save any remaining dressing in a sealed container in the refrigerator; be sure to let it sit for half an hour before using it. A different way to blend the components is to shake them together in a sealed mason jar. This is a good way to combine your dressing and keep it in precisely the exact same container. You may even make a double or triple batch and use it on all your appetizer salads. At less than 80 calories per serving, you’ll want to maintain this healthy salad dressing in your handbag and pour it on everything!
This Lemon Vinaigrette Dressing is readily customizable also. Add some herbs such as parsley or basil for even more flavor. It would be a delicious marinade for fish or poultry or pork.
