And it is! A 90-second keto bread that is not eggy (at all!) and toasts great. Anticipate a beautiful lightly candy bread that is ridiculously simple to whip up!
One of the most requested recipes by you guys has been to get a 90-second keto bread, but you all begged for it to not come out tasting just like an omelette! And so here it’s a beautiful cross between cornbread and a Hawaiian sweet roll.
Sounds weird? OK, let me clarify. When at room temperature I am reasonably sure you will all agree it tastes like our lovely corn (totally free ) bread.
Dense, however soft and slightly crumbly (and I am pretty sure that with a cornbread extract some good stuff will occur ). But then when you warm it up, it goes softer again and reminds me of a beautiful sweet bun.
It’s funny business with those bean bread (and cakes). Came out fluffier than the authentic oven-baked cake! Either way, it toasts well , and in the end, this really is non-negotiable. That is the thing with microwave pieces of bread: they come out looking like fugly little white sponges (see pic below!) .

The Uncooked Dough
Each batch makes three servings, and you can cook it up all together (because I did, with a mould such as this) or you may split it in 3 and utilize some small ramekins.
Post Microwave Cooking
If you split the dough in 3, then you’ll cook the bread to get 90 seconds on high, but if you cook it all together, you’ll want to perform 150 minutes (2 1/2 minutes). Either way, it’ll come out looking light and spongy (and not very tasty at all tbh!) . But worry not, wait for it to cool until only gently warm (it continues to cook men!) , and then you’ll want to give it a toast to get some texture on.
Can I Recommend Rather?!
Yeah definitely! But if you’re going to get into that territory, I’m just going to indicate you whip up our keto cornbread instead. That you was especially intended for the oven, and they’re very similar (and you will have leftovers to freeze or whatever suits your fancy!)
The Flours
OK, so (per regular gnom-gnom practice! ) ) This recipe uses a mix of grain-free flours, therefore I really do suggest that if it is a recipe you are frequently making to create a mixture . Say, multiply each of the ingredients by 5 or 10, after which you can scoop out the volume you want and combine it together with the butter and eggs.
This 90-second keto bread uses a mix of super fine almond flour, golden flaxseed meal, whey protein isolate, and a touch of xanthan gum.
Just remember that for optimal texture and increase, you’ll always wish to regrind your gold flaxseed meal at a sterile blender or bullet. Oh, also gold flaxseed isn’t the same as usual flaxseed (which leads to gummy and dense baked products ).
Whey protein isolate. This one is pretty much a must if you are baking the bread in a bowl (state as opposed to muffins), since it will ensure your bread does not collapse post-bake. It is possible to sub it with more almond flour and bake it into a muffin pan (smaller baked products have don’t need as much structure). Not the same, but functions well.
Remember that this ingredient varies tremendously from brand to brand. I generally utilized Isopure’s Zero Carb Unflavored, but have been experimenting with this particular grass-fed brand, and it works just too.
The Sweetener
This keto microwave bread will not have a touch of sweetener, but you really do have any leniency on its sweetness. Say, you are able to use only two tsp for a mild hint of up to 5 for a sweeter take.
In any event, I highly suggest you don’t bypass it as it brings out the natural sweetness of the keto flours, also defines the flavor of this bread.
You’ve got a couple of options . And allulose are my top picks (no aftertaste at all!) . Pyure is also a great one for muffins and fast pieces of bread, especially if you’re trying to limit your sugar alcohol consumption (it is added stevia makes it twice as sweet as sugar… i.e. you add half!) .
Oh, also if not limited by sugars, sub-1-to-1 with coconut or regular sugar. And when using Xylitol, be certain to be careful when you’ve got a pup (or kitty!) Around the house, as it is highly toxic to the little men!

90 Second Bread Gluten-Free & Keto
Ingredients
- 48 g almond-flour
- 21 g golden-flaxseed-meal
- 9 g whey-protein-isolate
- 3/4 tsp baking-powder
- 1/2 tsp xanthan-gum
- 1/4 tsp kosher-salt
- 1 egg
- 2-5 tsp erythritol-or-xylitol to taste*
- 1/2 tsp apple-cider-vinegar
- 28 g butter-melted-&-cooled
- 28 g sour-cream-or-heavy-cream
Instructions
- Add almond flour, flaxseed meal, whey protein, baking powder, xanthan gum and salt into a bowl. Whisk until completely combined, place aside. Note: don’t hesitate to create the flour mix ahead in a huge batch and quantify out 80g (or 1/2 cup + 6 TBSP) per bread.
- Add egg and sweetener into a large bowl and beat with a whisk or electric mixer for 1 minute or 2 until airy and lighter in colour. With the mixer , add in the apple cider vinegar and butter.
- Add in the dry flour mixture in two parts, alternating with the sour cream. Continue to mix for a moment until fully integrated and elastic, and the batter will thicken as you mix (think nearly a cookie dough texture!) .
- Transfer the batter into a microwave-safe dish or mold (use either a large one or split into three ramekins), pressing down and smoothing out the shirt with wet fingertips.
- If you divide the dough in 3, then you’ll cook the bread to get 90 minutes high, but if you cook it all together, you’ll want to perform 150 seconds (2 1/2 minutes). Either way, it’ll come out looking pale and spongy (and not too appealing at all tbh! ) ) . But worry not, wait for it to cool until only gently warm (it continues to cook as it warms men!) . Then you’re going to want to give it an superb toast to acquire some feel on (non-negotiable guys!) .
- Store in an airtight container for 2-3 days or in the freezer for a few months. Serve warm with a pat of butter (non-negotiable in my book!).
